Domaine de Kalathas was founded in 2011 by Jérôme Charles Binda on the Cycladic island of Tinos, Greece. Located in the Aegean Sea, the estate sits in the rare sandy granitic soils of the Kalathas Valley, where Jérôme and his eldest son Gabriel craft distinctive natural wines from a 10-hectare site of rocky terraces.

The vineyard mix includes olive trees, fruit trees and vegetables, and focuses on native Tinian grape varieties: Rozaki, Aspro, Mavro Potamisi, Koumariano and Kondoura. The vines are ungrafted and have never been affected by phylloxera; many are over 100 years old, with some approaching 200 years. This heritage material gives Domaine de Kalathas wines a deep connection to local terroir and resilience.

Domaine de Kalathas is self-sufficient in water and energy, relying on on-site wells and solar power. The estate grows vegetables for local consumption and runs the Kaloriziko Project, launched three years ago to engage young people with vine and olive cultivation. The project preserves traditional agricultural techniques and promotes sustainable resource use across the island.

Farming at Domaine de Kalathas is certified organic and guided by biodynamic and permaculture principles. The team practices semi-wild vine training to maintain biodiversity across the vineyard and support ecological balance. These sustainable viticultural methods underpin the character and authenticity of the wines.

Winemaking at Domaine de Kalathas varies by vintage but follows a consistent natural approach. Whites, rosés and lighter reds are typically foot-trodden and gently pressed in a vertical basket press, while longer macerations are used for other cuvées. Alcoholic fermentation occurs in large stainless-steel vats with minimal or no temperature control. Élevage is restrained — few rackings or bâtonnages — and generally lasts 12–18 months before bottling, preserving the wines’ purity and sense of place.
