Lambert Spielmann, a huge music lover, is based in St Pierre and farms two hectares in the neighbouring commune of Epfig.

Until 2016, Lambert worked as a social worker, specialising in mental health and motor impairment. After discovering a passion for wine, he began collaborating with Domaine Yves Amberg in Epfig and released his first small batches in 2017 and 2018. In early 2019 he joined forces with Alsace’s rising star Christophe Lindenlaub to broaden his experience, and in March of that year he rented his first 1.5 hectares (spread over eight parcels) from Yves Amberg, who has been organic since 1997, plus an additional half hectare from Florian Beck Hartweg.

In the vineyard, vines are left untrimmed throughout the growing season. He makes a single tractor pass each year on alternate rows to lightly work the soil and to mulch pruning cuttings. Biodynamic preparations 500 and 501 are applied, alongside willow bark and yarrow teas to stimulate disease resistance, deter insects, and support flowering and fruit set. 2019 yields were about 35–40 hectolitres per hectare — comparable to grand cru Burgundy or nearby Manon Farm.

In the winery, almost everything is handled by gravity; the pump is used only when gravity work is impractical. For macerated wines, both white and red, there is no remontage or pigeage unless there are signs of reduction. Pressing is carried out slowly and gently over 6–12 hours, eliminating the need for débourbage. Bottling is done by hand when the wines indicate they are ready.

The wines show correctness and purity, with clear fruit expression and harmonious texture. These qualities reflect not only excellent fruit but also a sensitive, skilled palate in the cellar. They are vinified with creativity and precision, producing wines that are both delicious and versatile.
