From the woodlands upland from Béziers in the small village of Quarante, this is the top bottling of old‑vine Carignan from Les Petites Mises. Made from 100% old‑vine Carignan planted on clay and limestone soils, the final pick of the harvest is hand‑harvested, manually destemmed, and allowed to ferment and macerate spontaneously for two months in neutral barrels before being pressed to glass demijohns for a further two years of élevage.
This special 2019 cuvée’s fruit was vinified on skins for those initial two months and then elevated in glass demijohns for two full years. Dark and brooding on the palate, it offers ripe fruit, a saline minerality and a gently tannic structure.
