This macerated Sauvignon Blanc was destemmed, left on the skins for about two weeks, then pressed and aged in old barrels. The 2020 shows bright, limestone-driven acidity and a solid mid‑palate. It highlights soil character more than the rockier styles of Karl and Eva’s Morillon and other wines. Clean, complex and well made. After a few years in bottle these wines become focused, expressive and deeply enjoyable.
Karl and Eva farm the rocky Sausal hills in south Styria and a nearby site nearer Slovenia. The Slovenian site has younger, limestone-rich soils, so its wines are less mineral but have sharper acidity. Best enjoyed with close friends or cellar for added complexity.
