Trish has packed a lot into her life so far - by her early twenties Trish had already lived in half a dozen countries across four continents. After falling in love with Italian food and wine she moved to Italy to learn more — and never left. Driven by an insatiable curiosity, she travelled the length of the country, studying with expert artisans and spending several formative years living, working and learning alongside influential natural-wine producers Cantina Giardino and Le Coste.
Location and terroir Trish now lives in a small cottage in the hills above the village of Bolsena in northern Lazio, farming two hectares nearby. The vineyards overlook Lake Bolsena, one of Europe’s largest volcanic lakes, which creates a distinctive microclimate thanks to its diurnal heating and cooling and unique wind patterns. The vineyards sit between the Mediterranean Sea and the Apennine Mountains, producing a temperate climate refreshed by mountain breezes. Soils are mainly volcanic ash and sand, delivering pronounced minerality that each grape variety expresses in its own way.
Farming and biodiversity In recent years Trish has been joined by her partner Piero, a talented musician who tends several remote, picturesque parcels just over the hill. Together they farm olives, cherries, figs and pears, keep bees, and cultivate vineyards with a strong emphasis on biodiversity. They practice organic farming, using herbal teas and preparations from local plants such as nettle, dandelion, willow and chamomile to support vine health and soil life.
Winemaking: zero additions, natural expression In their simple cantina, grapes are fermented and aged in a variety of traditional vessels, with nothing added at any stage. The wines reflect the people and place: joyful, vibrant, rustic and pure. These nourishing natural wines are made for everyday drinking, showcasing volcanic minerality, temperate-climate freshness and the honest expression of organic, low-intervention farming.
